When my husband and I were dating, we went to dinner at his aunt and uncle’s house. He had told them beforehand that I was a vegetarian, and his amazingly sweet aunt made sure to make something that I could enjoy, too. It was a delicious creamy tomato and parmesan pasta dish and I remember loving every bite. A few days later, I asked my husband (then boyfriend) to get the recipe for me, and he did! Since then, it has been one of our family favorites, and now that we have kids, they love it, too!
The best part about it (besides it being super delicious) is that it’s incredibly easy and only takes a few ingredients! You can quickly whip it up on a busy night and have dinner on the table in less than 30 minutes!
I’m also a big fan of quick and easy sides, and one of our go-to sides are Rhodes Warm N Serv rolls. You just pop them in the oven and they’re hot and ready in just a few minutes. We always have some ready to go in our freezer.

Creamy Tomato and Parmesan Pasta
This creamy tomato and parmesan pasta is super easy and can be on the table in 25 minutes! A great meatless dinner idea for those busy weeknights!
Ingredients
- 1 can Italian tomatoes, drained slightly
- 1 tsp dried basil
- 1/3 cup whipping cream
- 8 oz penne
- 1/3 cup Parmesan cheese
Instructions
- Cook penne to al dente and drain
- While the penne is cooking, combine the tomatoes and basil in a frying pan on the stove. Cook on medium until it begins to thicken, about 15 minutes.
- Add whipping cream and Parmesan cheese, and cook for about 10 more minutes.
- Mix everything together and serve!
