Super easy Hot Fudge Sundae Cake. It’s the perfect summer dessert! A chocolate, fudgey cake topped with vanilla ice cream, whipped cream, and cookies!

Growing up, one of my favorite things to do in the summer was get ice cream from the ice cream truck. My sister and I would immediately perk up when we heard the music coming up our street. My mom kept a cup in the cabinet full of quarters, and we would grab it and run out to wait for the truck to get to our house. We would usually get some little kiddie ice cream bar with a bubble gum nose or something that we couldn’t buy at the store. Needless to say, since I was young, ice cream has been one way to make me instantly happy during hot summer days.
Now that I am older, ice cream bars with bubble gum noses aren’t my thing (can anyone relate?). These days, I love making hot fudge sundaes. There’s just something special about vanilla ice cream, hot fudge, and whipped cream. Last weekend the Mister went to Philadelphia for a big medical school exam, and I decided to make a delicious treat for myself! The result was this insane Hot Fudge Sundae Cake.
It combines everything you love about hot fudge sundaes with fudgey, chocolatey cake that is reminiscent of a chocolate melting cake. What could be better?
The best part of this recipe is that I already had all the ingredients on hand. I didn’t have to go out and buy anything special! And you can also make it more to your taste depending on what kind of ice cream you choose to go with it.
To start, heat your oven to 350 degrees. Yes, it’s going to make your kitchen a little hotter when it’s already hot from the summer warmth, but I promise, it’s worth it.
In an ungreased 9×9″ pan, stir together your flour, sugar, cocoa, baking powder, and salt. Also, yes, I know this isn’t a 9×9″ pan. But it’s the closest thing I have and it works just the same.
Mix in the milk, oil, and vanilla with a fork until smooth.
Sprinkle with brown sugar and cocoa.
Pour hot water over the batter.
Bake for 40 minutes.
Let stand for 15 minutes. It will look like a volcano or a Yellowstone mud pot when it comes out of the oven, bubbling and everything.
Spoon into dessert dishes and top with ice cream, whipped cream, and crushed cookies.
It’s so simple, you don’t get any dishes dirty but your one pan and whatever you eat it out of, and it tastes so much like a hot fudge sundae but also like cake at the same time! You really cannot go wrong with this recipe.
So seriously, instead of chasing after the ice cream truck, make this easy and delicious Hot Fudge Sundae Cake. It is AMAZING and so delicious! You probable already have all the ingredients, and you will not be sorry you turned on the oven.
